Cake
1 3/4 Cups Almond Flour
1/4 Cup Coconut Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Cup Butter
1 Cup Sweetener (I used Allulose)
2 Eggs, beaten
3/4 Cup Sour Cream
Filling and/or topping:
1 Cup Brown Sugar Swerve
1 Cup Chopped Walnuts
2 Tsp Cinnamon
1. Mix all dry ingredients together for the cake, and then add the liquid ones. Add add the eggs last.
2. Take 1/2 the batter and put it in the pan in a 9x9 parchment lined pan or bundt pan, add a layer of the filling/topping. Cover it with the rest of the batter. Wait to add the topping.
3. Bake this at 350° for 30 min, and then add the topping to bake for another 15 min. Use the second to the lowest rack so the top doesn't burn. I Would also suggest covering with aluminum foil for the first 30 min. since almond flour tends brown more quickly than traditional flours.
4. After you remove it from oven, and allow to cool. Top it off with a simple glaze of powdered Erythritol, Heavy Cream and Vanilla. Instead of vanilla you can add Banana, Strawberry or any flavoring you like.
